In civil engineering, hydrology is the study of the earth’s water. This includes the water cycle we all had to learn about in school, but it’s also about how the water moves through and interacts with the earth’s surface. In hydrology, drawdown is a term for the lowering of the surface elevation of a body of water. Coincidentally, this is also the process of how beer is removed from a keg.

For us, hydrology is near and dear to our hearts given our founder’s civil engineering background. The intersection between engineering and the brewing process was too great to ignore.
